</li>

<div class="wprm-recipe-instruction-text">Pour over boiling water and mix well.</div>
</li>

<div class="wprm-recipe-instruction-text">Cover for 5 mins then fluff it with fork and cover for another 5 mins then set aside.</div>
</li>

<div class="wprm-recipe-instruction-text">Skip cooking the beef if you are using already cooked meat.</div>
</li>

<div class="wprm-recipe-instruction-text">Cut beef into very small cubes.</div>
</li>
<li id="wprm-recipe-17801-step-0-5" class="wprm-recipe-instruction">
<div class="wprm-recipe-instruction-text">Season beef with salt, pepper, ground coriander and mix very well and put in a pot</div>
</li>
<li id="wprm-recipe-17801-step-0-6" class="wprm-recipe-instruction">
<div class="wprm-recipe-instruction-text">Then add 1 tbsp of water and a bay leaf cook on low for about 10 mins until it is cooked and the water has dried up.</div>
</li>
<li id="wprm-recipe-17801-step-0-7" class="wprm-recipe-instruction">
<div class="wprm-recipe-instruction-text">Then add 1 tsp oil to pot and fry the beef for 5 mins till brown, remove beef and set aside.</div>
</li>
<li id="wprm-recipe-17801-step-0-8" class="wprm-recipe-instruction">
<div class="wprm-recipe-instruction-text">Peel and slice onions, deseed and cut pepper and chillies and add to pot with bay leaf, ½ jumbo cube, tomato puree, oil and water.</div>
</li>
<li id="wprm-recipe-17801-step-0-9" class="wprm-recipe-instruction">
<div class="wprm-recipe-instruction-text">Mix these well, cover and cook for about 35 mins until soft. Keep an eye on this because if the water dries out before the vegetables cook then add in a tbsp of water at a time.</div>

<div class="wprm-recipe-instruction-text">In the last five minutes open the pot and allow the water to evaporate.</div>
</li>

<div class="wprm-recipe-instruction-text">When the water has completely evaporated add in the beef and stir for about 10 seconds and add in the couscous and mix till everything is well combined and warmed through.</div>
</li>

<div class="wprm-recipe-instruction-text">Adjust the seasoning and serve with some grilled meat and salad.</div>

<p>Add tomato puree, salt, pepper powder, cumin powder and paprika along with stock.</p>

<p>Quick-marinated boneless chicken nestled in a mixture of tiny orzo pasta with tomatoes and bell peppers. Of course, as you would expect, layers of flavor from onions, garlic, and a few spices. As cliche as this sounds, a sprinkle of feta cheese, just before serving, completes this chicken orzo for me.</p>

<h2>Instructions:</h2>
<ol>
<li>Cook pasta according to the package in a pot of salted water. When it’s completely cooked, drain leaving a little water in the pot.</li>
<li>Heat olive oil in a large pan over medium heat. Saute halved grape tomatoes and tomato paste in it.</li>
<li>Pour milk in it and stir.</li>
<li>Transfer the pasta into the pan with that little juice and stir.</li>
<li>Add in mozzarella balls and butter and cover the pan. Let them melt in the pan for about 2 minutes. Finally toss in the basil leaves and stir to combine them all well.</li>
<li>Garnish with fresh mint leaves and serve hot or warm.</li>

<p class="has-text-align-center">A pan of roasted vegetables is one of my most favorite things, but I always serve them as a side dish. For something as wonderful as roasted veggies I figured it was time to make them the main show, so a couple weeks ago I did just that and made this roasted vegetable pasta. Gemelli tossed in fresh lemon juice, grated Parmesan with pancetta, caramelized Brussels sprouts, and red onion makes a simple and light dinner – this roasted vegetable pasta is perfect post-holiday when you want something comforting but not heavy.</p>

<h2>HOW TO ROAST THE VEGETABLES</h2>
<p>Along with the sprouts and onion, I added a whole head of garlic. Roasted garlic is a magical thing – it’s a softer, mellower version of its raw self. Just slice off the top of the garlic, drizzle the exposed cloves with olive oil, and wrap it in foil. Spread the trimmed Brussels sprouts and sliced red onion in a single layer on a large baking dish, toss them with olive oil and into a 400-degree oven it all goes, along with the garlic, for about 30 minutes.</p>
<h2>HOW TO MAKE THE PASTA</h2>
<p>To take what normally might be a simple roasted vegetable side dish and make it a main course just add some pasta. In this case, gemelli. Any short pasta will work, like penne, rotini or cavatappi so use what you like (or can find).</p>
<p>Once the veggies are roasted it all comes together starting with some diced pancetta. I sizzled some in a large pan until it released its fat before adding the soft roasted garlic (smooshed into a paste), the cooked pasta, a few squeezes of fresh lemon, and a handful of grated Parmesan. Then into the pan go the roasted vegetables and all it needs is a quick toss.</p>
<p>This roasted vegetable pasta is a lighter dish, one that makes a nice post-holiday dinner when something not laden with a heavy sauce is a welcomed relief. It’s sort of like a pasta salad except each bite has soft caramelize winter vegetables and you serve it warm, although I did enjoy some of the leftovers straight from the fridge and it was delicious.</p>

<h2>INGREDIENTS</h2>
<ul>
<li><span data-amount="1">1</span> pound brussels sprouts, ends trimmed</li>
<li><span data-amount="0.25">1/4</span> of a large red onion, peeled and sliced into <span data-amount="1">1</span>-inch wedges</li>
<li><span data-amount="1" data-unit="tbsp">1 tbsp</span> olive oil, plus 2 tsp divided</li>
<li><span data-amount="1">1</span> head garlic</li>
<li><span data-amount="6" data-unit="oz">6 oz</span> <a href="https://couscousday.com/product/gemelli-500gr/" target="_blank" rel="noopener noreferrer">Gemelli pasta</a></li>
<li><span data-amount="4" data-unit="oz">4 oz</span> diced pancetta</li>
<li>Juice of <span data-amount="1">1</span> lemon</li>
<li><span data-amount="1" data-unit="tbsp">1 tbsp</span> chopped fresh parsley</li>
<li><span data-amount="0.25" data-unit="cup">1/4 cup</span> grated Parmesan</li>
</ul>
<h2>INSTRUCTIONS</h2>
<ol>
<li>Preheat oven to 400 degrees. Spread the sprouts and sliced onions in an even layer on a baking sheet. Drizzle 1 tbsp of olive oil over the top of the vegetables.</li>
<li>Remove the loose outer papery skin from the head of garlic. Slice off just enough of the top of the garlic to expose the cloves. Place the garlic on a piece of tin foil and drizzle 1 tsp of olive over the top of the cloves. Wrap the garlic in the tin foil and place it on the baking sheet with the other veggies. Roast the veggies for 30 minutes. Once roasted, unwrap the garlic and, once it’s cool enough to handle, squeeze the softened cloves out of the bulb. Chop the cloves and smoosh them with the back of your knife until they form a paste.</li>
<li>Bring a pot of water to a boil and cook the pasta according to package directions. While the pasta boils, heat 1 tsp of olive oil in a 10-inch pan over medium heat. Add the pancetta and cook it in the oil until it starts to release its own fat. Add the roasted vegetables and cooked pasta to the pan and stir to combine. Add the roasted garlic, lemon juice, parsley, and cheese. Stir again and serve.</li>

<h2>INSTRUCTIONS</h2>
<div>Preheat the oven to 375 degrees F. Cook the pasta al dente, according to package directions. Drain and set aside.</div>
<div>Meanwhile, heat the olive oil in a large skillet over medium-high heat. When the oil begins to shimmer, add the garlic and cook until it begins to brown, about a minute or two. Add the spinach and cook, stirring occasionally, until the leaves begin to wilt but are still bright green, about 3 to 4 minutes. The spinach should be reduced by half. Remove from the heat and let cool.</div>
<div>In a mixing bowl, stir together the spinach, ricotta, mozzarella, Parmesan, egg, basil and salt and pepper until thoroughly combined. Pour 1/2 cup of the marinara sauce into the bottom of a shallow 8-inch by 8-inch baking dish. Stuff each pasta shell with a generous amount of the spinach and ricotta mixture, and place in the baking dish.</div>
<div>Cover with the remaining sauce and bake covered with aluminum foil for 25 minutes. Remove the foil and continue baking until the top begins to brown and the sauce begins the bubble, another 10-15 minutes. Serve warm with a dusting of Parmesan.</div>

<div class="recipe-instruction-text">Add the ground beef to a large cast iron skillet (this browns very well) and brown until a deep brown crust appears before breaking the beef apart.</div>

<div class="recipe-instruction-text">Stir the ground beef and brown until a deep crust appears on about 50 or so percent of the beef.</div>

<div class="recipe-instruction-text">Remove the beef (you can leave the fat) and add the butter and the onions and bell peppers.</div>

<p>Let brown for <span class="wprm-timer tooltipstered" data-seconds="60">1-2 minutes</span> before stirring, then let brown for another <span class="wprm-timer tooltipstered" data-seconds="60">1-2 minutes</span> before stirring again.</p>

<div class="recipe-instruction-text">Add the beef back into the pan.</div>
</li>

<div class="recipe-instruction-text">Add the ketchup, Worcestershire sauce, salt and black pepper into the pan and stir.</div>

<div class="recipe-instruction-text">Take it off the heat and scoop it into the pasta shells.</div>
</li>

<div class="recipe-instruction-text">Top each shell with cubes of cheese (use half the cheese for this).</div>
</li>

<div class="recipe-instruction-text">Using the same pan add the beef broth, milk and cornstarch and whisk before turning the heat back on.</div>

<p>Add in the rest of the cheddar cheese a little at a time while whisking for <span class="wprm-timer tooltipstered" data-seconds="180">3-5 minutes</span> or until thickened.</p>

<p>Bake in the oven for <span class="wprm-timer tooltipstered" data-seconds="600">10 minutes</span> to melt the cheese.</p>

<p>Cheesy Taco Pasta is my nod to the hamburger helper I grew up eating as a kid. While this isn’t exactly the “crunchy taco hamburger helper” because I skipped adding the tortilla chips on top, the ooey gooey meat and cheese sauce is still the same and with just a few ingredients!</p>

<p>You can certainly add your own fresh vegetables to the mix instead of the salsa, but I used a good jarred salsa and it tasted fantastic. On occasion I’ve also used fresh salsa, but the higher water content of it makes the pasta more watery.</p>
<p>You can also make this Cheesy Taco Pasta as cheesy as you’d like. I added only a single cup of cheese, while some in my family will add additional piles of cheese to their plate. If you want your pasta to be really cheesy I suggest 2 cups of cheese.</p>

<p>You can also freeze this pasta for a later date. I’d skip adding the cheese and when you defrost it, use a cup of chicken or beef stock. Then once warmed through add the cheese, mix and serve.</p>
