<p>One-pot Greek Baked Chicken Orzo: Perfectly seasoned chicken, nestled into a mixture of tiny orzo pasta with onions, bell peppers, and tomato. This is a dinner for any night of the week. Easy, and absolutely satisfying. I’m in love!</p>
<p>Quick-marinated boneless chicken nestled in a mixture of tiny orzo pasta with tomatoes and bell peppers. Of course, as you would expect, layers of flavor from onions, garlic, and a few spices. As cliche as this sounds, a sprinkle of feta cheese, just before serving, completes this chicken orzo for me.</p>

<div>With the colder weather I have been thinking about soups more and I thought that I would start out with this nice and hearty, light and bright lemon chicken <a href="https://couscousday.com/product-category/pasta/soup/" target="_blank" rel="noopener noreferrer">orzo soup</a>. This soup is essentially a take on a chicken noodle soup using orzo as the ‘noodle’ and it emphasizes brightness by the use of lemon juice and zest along with plenty of fresh parsley. In addition, I like to add a touch of thyme for some earthiness and a bit of tarragon which perfectly complements the bright flavours of the soup and adds a hint of the exotic with its anise-y and vanilla-y undertones! This soup is pure comfort food that is absolutely amazing on a cold winter day, it’s hot, filling and it adds a bit of summery sunshine to your day! What’s even better is that it takes less than 30 minutes to make and it will fit into your New Year’s diet resolutions!</div>

<p>I like to start this soup off with a full chicken to make my own chicken broth and then use the poached chickens meat in the soup itself but it’s also great, and so much quicker and easier to make, with pre-made chicken broth and pre-cooked chicken! Either way you make it, be ready for a blissful experience of light and healthy comfort in a bowl!</p>

<li>1 onion, diced</li>
<li>2 carrots, diced</li>
<li>2 stalks celery, diced</li>
<li>2 cloves garlic, chopped</li>
<li>1 teaspoon thyme, chopped</li>
<li>4 cups chicken broth or chicken stock</li>
<li>2 cups cooked chicken, cut into small pieces</li>
<li>1 cup <a href="https://couscousday.com/product-category/pasta/soup/" target="_blank" rel="noopener noreferrer">orzo </a></li>
<li>salt and pepper to taste</li>
<li>1 lemon (zest and juice)</li>
<li>1 tablespoon tarragon, chopped (optional)</li>
<li>1 handful parsley, chopped</li>
</ul>
<h2>Directions</h2>
<ol class="instructions">
<li>Heat the oil in a large stock pot over medium-high heat, add the onions, carrot and celery and cook until tender, about 8-10 minutes.</li>
<li>Add the garlic and thyme and cook until fragrant, about a minute.</li>
<li>Add the chicken broth or stock, chicken and orzo, bring to a boil, reduce the heat and simmer until the orzo is just tender, about 5 minutes.</li>
<li>Season with salt and pepper to taste and mix in the, lemon juice, zest, tarragon and parsley.</li>

<h2>Reheating Orzo</h2>

When reheating, make sure you add a tablespoon of liquid per cup and stir it.</p>

It may not be the healthiest thing in the world, but I’m sure everyone agrees on that if something is creamy, there is no doubt it is super tasty. This<strong> Creamy Caprese Pasta</strong> is no exception. <p>This is a perfect family recipe because everyone loves to stretch that melting cheese when having their pasta and there is always fun around the table. This is a super easy recipe and you can’t have an excuse for not making it. Make it whenever you feel you are stuck and can’t find anything to make for dinner. I promise your family will thank you!</p>

<p>Besides basil leaves, I used a few fresh mint leaves in this pasta to give it a bit more freshness and it turned out wonderful! You can leave it out if you don’t want to mix the flavors of herbs and just go with basil. I recommend you to try it though.</p>

<li><span data-amount="1" data-unit="tablespoon">1 tablespoon</span> tomato paste</li>
<li><span data-amount="0.25" data-unit="cup">¼ cup</span> milk</li>
<li><span data-amount="3" data-unit="ounce">3 ounce</span>s mini mozzarella balls</li>
<li>A few fresh basil leaves</li>

<h2>Instructions:</h2>
<ol>
<li>Cook pasta according to the package in a pot of salted water. When it’s completely cooked, drain leaving a little water in the pot.</li>
<li>Heat olive oil in a large pan over medium heat. Saute halved grape tomatoes and tomato paste in it.</li>
<li>Pour milk in it and stir.</li>
<li>Transfer the pasta into the pan with that little juice and stir.</li>
<li>Add in mozzarella balls and butter and cover the pan. Let them melt in the pan for about 2 minutes. Finally toss in the basil leaves and stir to combine them all well.</li>
<li>Garnish with fresh mint leaves and serve hot or warm.</li>

<p class="has-text-align-center">A pan of roasted vegetables is one of my most favorite things, but I always serve them as a side dish. For something as wonderful as roasted veggies I figured it was time to make them the main show, so a couple weeks ago I did just that and made this roasted vegetable pasta. Gemelli tossed in fresh lemon juice, grated Parmesan with pancetta, caramelized Brussels sprouts, and red onion makes a simple and light dinner – this roasted vegetable pasta is perfect post-holiday when you want something comforting but not heavy.</p>

<h2>HOW TO ROAST THE VEGETABLES</h2>
<p>Along with the sprouts and onion, I added a whole head of garlic. Roasted garlic is a magical thing – it’s a softer, mellower version of its raw self. Just slice off the top of the garlic, drizzle the exposed cloves with olive oil, and wrap it in foil. Spread the trimmed Brussels sprouts and sliced red onion in a single layer on a large baking dish, toss them with olive oil and into a 400-degree oven it all goes, along with the garlic, for about 30 minutes.</p>
<h2>HOW TO MAKE THE PASTA</h2>
<p>To take what normally might be a simple roasted vegetable side dish and make it a main course just add some pasta. In this case, gemelli. Any short pasta will work, like penne, rotini or cavatappi so use what you like (or can find).</p>
<p>Once the veggies are roasted it all comes together starting with some diced pancetta. I sizzled some in a large pan until it released its fat before adding the soft roasted garlic (smooshed into a paste), the cooked pasta, a few squeezes of fresh lemon, and a handful of grated Parmesan. Then into the pan go the roasted vegetables and all it needs is a quick toss.</p>
<p>This roasted vegetable pasta is a lighter dish, one that makes a nice post-holiday dinner when something not laden with a heavy sauce is a welcomed relief. It’s sort of like a pasta salad except each bite has soft caramelize winter vegetables and you serve it warm, although I did enjoy some of the leftovers straight from the fridge and it was delicious.</p>

<ul>
<li><span data-amount="1">1</span> pound brussels sprouts, ends trimmed</li>
<li><span data-amount="0.25">1/4</span> of a large red onion, peeled and sliced into <span data-amount="1">1</span>-inch wedges</li>
<li><span data-amount="1" data-unit="tbsp">1 tbsp</span> olive oil, plus 2 tsp divided</li>
<li><span data-amount="1">1</span> head garlic</li>
<li><span data-amount="6" data-unit="oz">6 oz</span> <a href="https://couscousday.com/product/gemelli-500gr/" target="_blank" rel="noopener noreferrer">Gemelli pasta</a></li>
<li><span data-amount="4" data-unit="oz">4 oz</span> diced pancetta</li>
<li>Juice of <span data-amount="1">1</span> lemon</li>
<li><span data-amount="1" data-unit="tbsp">1 tbsp</span> chopped fresh parsley</li>
<li><span data-amount="0.25" data-unit="cup">1/4 cup</span> grated Parmesan</li>
</ul>
<h2>INSTRUCTIONS</h2>
<ol>
<li>Preheat oven to 400 degrees. Spread the sprouts and sliced onions in an even layer on a baking sheet. Drizzle 1 tbsp of olive oil over the top of the vegetables.</li>
<li>Remove the loose outer papery skin from the head of garlic. Slice off just enough of the top of the garlic to expose the cloves. Place the garlic on a piece of tin foil and drizzle 1 tsp of olive over the top of the cloves. Wrap the garlic in the tin foil and place it on the baking sheet with the other veggies. Roast the veggies for 30 minutes. Once roasted, unwrap the garlic and, once it’s cool enough to handle, squeeze the softened cloves out of the bulb. Chop the cloves and smoosh them with the back of your knife until they form a paste.</li>
<li>Bring a pot of water to a boil and cook the pasta according to package directions. While the pasta boils, heat 1 tsp of olive oil in a 10-inch pan over medium heat. Add the pancetta and cook it in the oil until it starts to release its own fat. Add the roasted vegetables and cooked pasta to the pan and stir to combine. Add the roasted garlic, lemon juice, parsley, and cheese. Stir again and serve.</li>

<h2>INSTRUCTIONS</h2>
<div>Preheat the oven to 375 degrees F. Cook the pasta al dente, according to package directions. Drain and set aside.</div>
<div>Meanwhile, heat the olive oil in a large skillet over medium-high heat. When the oil begins to shimmer, add the garlic and cook until it begins to brown, about a minute or two. Add the spinach and cook, stirring occasionally, until the leaves begin to wilt but are still bright green, about 3 to 4 minutes. The spinach should be reduced by half. Remove from the heat and let cool.</div>
<div>In a mixing bowl, stir together the spinach, ricotta, mozzarella, Parmesan, egg, basil and salt and pepper until thoroughly combined. Pour 1/2 cup of the marinara sauce into the bottom of a shallow 8-inch by 8-inch baking dish. Stuff each pasta shell with a generous amount of the spinach and ricotta mixture, and place in the baking dish.</div>
<div>Cover with the remaining sauce and bake covered with aluminum foil for 25 minutes. Remove the foil and continue baking until the top begins to brown and the sauce begins the bubble, another 10-15 minutes. Serve warm with a dusting of Parmesan.</div>

<div class="recipe-instruction-text">Add the ground beef to a large cast iron skillet (this browns very well) and brown until a deep brown crust appears before breaking the beef apart.</div>

<div class="recipe-instruction-text">Remove the beef (you can leave the fat) and add the butter and the onions and bell peppers.</div>

<p>Let brown for <span class="wprm-timer tooltipstered" data-seconds="60">1-2 minutes</span> before stirring, then let brown for another <span class="wprm-timer tooltipstered" data-seconds="60">1-2 minutes</span> before stirring again.</p>

<div class="recipe-instruction-text">Add the ketchup, Worcestershire sauce, salt and black pepper into the pan and stir.</div>

</li>

<div class="recipe-instruction-text">Top each shell with cubes of cheese (use half the cheese for this).</div>

<div class="recipe-instruction-text">Using the same pan add the beef broth, milk and cornstarch and whisk before turning the heat back on.</div>

<p>Add in the rest of the cheddar cheese a little at a time while whisking for <span class="wprm-timer tooltipstered" data-seconds="180">3-5 minutes</span> or until thickened.</p>

<p>Cheesy Taco Pasta is my nod to the hamburger helper I grew up eating as a kid. While this isn’t exactly the “crunchy taco hamburger helper” because I skipped adding the tortilla chips on top, the ooey gooey meat and cheese sauce is still the same and with just a few ingredients!</p>

<p>You can certainly add your own fresh vegetables to the mix instead of the salsa, but I used a good jarred salsa and it tasted fantastic. On occasion I’ve also used fresh salsa, but the higher water content of it makes the pasta more watery.</p>
<p>You can also make this Cheesy Taco Pasta as cheesy as you’d like. I added only a single cup of cheese, while some in my family will add additional piles of cheese to their plate. If you want your pasta to be really cheesy I suggest 2 cups of cheese.</p>

<p>You can also freeze this pasta for a later date. I’d skip adding the cheese and when you defrost it, use a cup of chicken or beef stock. Then once warmed through add the cheese, mix and serve.</p>

<p>Chicken and <a href="https://couscousday.com/product-category/pasta/" target="_blank" rel="noopener noreferrer">pasta</a>, 2 big favourite all over the world. Bring them together and you create one delicious dinner that everybody will love. No more fussing over what to put on the table, it’s so easy.</p>
<p>Now, most of my chicken dishes are either whole chicken parts, or diced chicken breasts. Ground chicken is not too often mentioned on my blog, altough I do cook with ground turkey often. But lean ground chicken breast, apart from being so easy to cook with, it’s also a good choice if you are looking for lighter dishes.</p>
<p>I decided to make this <a href="https://couscousday.com/product-category/pasta/" target="_blank" rel="noopener noreferrer">pasta</a> dinner extra special by adding mushrooms and pancetta to the sauce, and the combo was pure delish. Absolutely amazing! You get a rich sauce that screams perfection, and toss it over the perfectly cooked tagliatelle. What’s not to love about it?</p>
<p>If you don’t have ground chicken, you can use diced chicken breasts without any problem, the taste won’t be masively different, it’s just a matter of different texture.</p>

<h2>HOW DO YOU MAKE THE PANCETTA, CHICKEN AND MUSHROOM SAUCE?</h2>
<p>Start by making the sauce first, since it takes longer to cook. The tagliatelle is ready in about 10-12 minutes or so, you can boil them just before the sauce is ready.</p>
<ul>
<li>sautee the onion and garlic, then add the sliced mushrooms and cook for 3-4 minutes until nicely brown</li>
</ul>
<p>Mushrooms release quite a big of liquid, so there is no need to add any water to them. Just leave them to cook well, the darker the colour, the better taste.</p>
<ul>
<li>add the pancetta, and give it a good stir, and leave to cook for a few minutes until the pancetta is crispy</li>
</ul>
<p>At this stage there is so much flavour already. As you know, I don’t cook with alcohol, but if you don’t mind it, you can add a splash of white wine, and leave to cook until it evaporates.</p>
<ul>
<li>now, the ground chicken can be added too</li>
</ul>
<p>Continue to stir until you break the ground chicken into small pieces, and no longer pink.</p>
<ul>
<li>add the chopped tomatoes, chicken broth, herbs and spices, and tomato puree, and leave to cook until the sauce is reduced.</li>
<li>cook the tagliatelle separately, drain, and toss into the sauce</li>
</ul>
<p>And that’s our dinner done!</p>

<li>Heat up the oil in a pan, add the butter and allow it to melt.</li>
